Ithaa Undersea Restaurant

If going to the Maldives isn’t enough for your bucket list, how about eating at the world’s first underwater restaurant? Getting to dine at Ithaa Underwater Restaurant at the Conrad Maldives is one of the perks of staying there. The domed restaurant is located 16 feet below sea level. You might see a stingray or a shark swim by while sipping on your champagne! Ithaa is available for mid-morning champagne, a four-course lunch, and a six-course dinner. As with all resort restaurants in the Maldives, it can be pricey. We found the food and service at Ithaa to be quite good, so if you can spend the money, it’s worth dining here. Here are some highlights from our dinner at Ithaa Underwater Restaurant at the Conrad Maldives.

I was afraid it would feel like an aquarium, but having the fish swim overhead is much cooler! (see video below)

The first course was caviar served with dill sour cream and lemongrass blinis.

The amuse bouche was a foie gras and truffle dumpling with cucumber and green grape consommé.

Next was a blackened scallop served with beetroot, green peas, plantain chips, and egg gravlax.

The entree was reef lobster stuffed calamarata pasta with burrata and lemongrass veloute.

Before the main course, we were presented with a green apple and ginger sorbet.

For my main, I had sous vide wagyu beef tenderloin served with prawn ragout, squid ink, and celery root pureé, charcoaled shallots, and black garlic. The other option was coconut crusted légine.

Dessert was a Bolivian cru sauvage chocolate and kaffir lime panna cotta.
